In Bergamo, bread is not wasted, it’s enjoyed as beer.

Writer: Biova ProjectBiova Project

Last year, thanks to our collaboration with Aspan Bergamo, we created Biova Bergamo. This craft beer fights food waste while offering a unique taste: the aroma of bread and the flavor of salt. It is brewed using locally recovered bread, generously donated by bakers from the Bergamo province.

Until the end of 2022, you can find it on promotion in all participating bakeries. For every 4 bottles of Biova Bergamo, you’ll receive a Biova glass as a gift!

Biova Bergamo not only reduces waste but also saves up to 30% of raw materials. Additionally, it prevents the release of 1,365 kg of CO2 into the environment—the equivalent of 5 flights between Rome and London.

“The project is based on synergy with our bakers,” says Ferrandi, president of Aspan Bergamo, “and Biova Project, which will collect unsold bread from selected bakeries and transform it into craft beer. The final product will then be available at participating bakeries.”

The essence of these beers is to “let the bread speak”: classic brewing traditions enhanced by a touch of saltiness from the bread itself - a flavor as striking as the impact of the project.
