Ri-drink is Biova Project’s new craft kombucha, made by upcycling the albedo of Sorrento IGP lemons — the white, spongy layer between the peel and the pulp, usually discarded during citrus processing.

Ri-drink combines the zesty freshness of lemon albedo with a subtle savory note, creating a vibrant balance and a clean, pleasantly structured finish.

the ancient art of kombucha

Kombucha is an ancient beverage made by fermenting sweetened tea with a symbiotic culture of bacteria and yeast, commonly known as a SCOBY. This natural process, which takes around two weeks, transforms the sugars into a living drink rich in probiotics, digestive enzymes, and antioxidants.

What makes kombucha special is its unique microbiological profile: each sip delivers millions of beneficial microorganisms that support gut health and the immune system. Its light natural fizz and signature tangy aftertaste are the result of this slow, carefully controlled fermentation.

the value of upcycled albedo

Albedo — the white, spongy inner layer of lemon peel — is traditionally considered a byproduct of citrus processing. Yet this "hidden ingredient" is packed with valuable nutrients: it contains pectin (a soluble fiber with prebiotic properties), vitamin C, bioflavonoids, and antioxidant compounds.

Biova Project chose to give new life to this often-discarded material by creating a perfect synergy between Sorrento lemon albedo and the kombucha base. For every 500 liters of Ri-drink produced, 10 kilograms of albedo are recovered — proving that circular economy can generate high-quality products starting from what would otherwise go to waste.

The combination of lemon and salt creates a drink with a bold yet balanced character: the citrusy freshness of the albedo blends with the complexity of the kombucha, while the salt — added in perfectly measured amounts — enhances the flavors and adds a pleasant mineral note.

On the palate, you first notice the lively acidity of the lemon, followed by the roundness of the fermentation, finishing with a slightly savory note that invites another sip. The presence of salt doesn’t mask but rather highlights the citrus notes, creating a surprising balance between sweet, sour, and salty.

With only 8 kcal per 100ml and a low sugar content (1.6g per 100ml), Ri-drink is the perfect choice for those seeking flavor and wellness in every sip.

how to best enjoy ri•drink

To fully appreciate Ri-drink, it is recommended to store it in the refrigerator between 0 and 4°C and consume it by the date indicated on the can. When ready to drink, avoid shaking the beverage and consume it immediately after opening, serving it cold in a tall glass to enjoy its pleasant effervescence.

As a living product, Ri-drink may naturally present sediment at the bottom and a slight film on the surface—signs of the beneficial microorganisms. The can is made of recycled aluminum, which perfectly preserves the product’s organoleptic qualities and is fully recyclable.
