Pasta Berruto is now part of the Biova Project movement. From this collaboration comes the world’s first beer made with pasta! This partnership stems from a shared commitment to values, thoughts, and business philosophies such as respect for the environment and nature, and the continuous pursuit of innovation, especially in terms of sustainability.
The project originates from a need we feel strongly about: reducing food waste.
According to the FAO, one-third of all food produced globally is lost or wasted every year, amounting to 900 billion euros. Food waste is undoubtedly one of the greatest problems of our time, and it’s something each of us must take responsibility for.
From this awareness comes Biova Pasta, the first beer made from pasta surplus—a circular economy project and a fight against food waste.

Biova Project, whose mission is to create products that reduce food waste, has expanded its range with a new beer recipe made from pasta scraps. After several months of testing, trials, and checks, it was proven that 200 kg of pasta scraps can yield 2,500 liters of excellent craft beer.
BIOVA PASTA is a beer with a smooth taste and a slightly fruity aroma. It has a medium body, with hints of wheat, and a golden color, just like the pasta it’s made from!

WHAT ARE PASTA SCRAPS?
Every time a batch of pasta is produced, the beginning and end of the production process tend to break. It’s a physical and inevitable issue. That’s why pasta scraps are also called “breakages.” A broken piece of pasta is nutritionally identical to a whole piece but is no longer commercially viable, which is why it is discarded.
Traditionally, pasta scraps are sent to the animal husbandry industry.
Matteo Berruto, CTO of Pasta Berruto, explains in this video how the production process works regarding scrap management: ““During format changes, scraps are generated that can take two paths. Normally, they go to remilling and return to our production cycle. In this case, we decided to give these dry scraps to Biova Project to turn them into something equally good.”
Franco Dipietro, CEO of Biova Project, shares the mission of the project and announces the arrival of this new product in the fight against waste:
“The first beer made from pasta: a circular economy project and a fight against food waste, but also a great celebration of Italian culinary creativity.”
