From the recovery of coffee blends contained in dented capsules comes a truly unique beer.

Driven by innovation and sustainability, a one-of-a-kind project comes to life: transforming coffee recovered from non-compliant capsules during the production process into a high-quality craft beer. This beer is the result of a collaboration between Cellini and Biova Project, who joined forces to give a second life to over 10,000 dented capsules, turning them into 2,500 liters of beer that rewrites the rules of taste and circular economy.

This special beer draws inspiration from Schwarzbier, a dark German lager, and is defined by its deep color and pronounced notes of 100% Arabica coffee. With an alcohol content of 4.7% ABV, it offers a distinctive tasting experience, where smoothness and roasted coffee nuances blend in perfect balance with the beer’s freshness. The entire project stands as a clear example of how potential waste can be transformed into a valuable resource, combining production excellence with environmental responsibility. This initiative not only highlights waste reduction, but also opens new paths in sustainable production, proving that innovation can go hand in hand with respect for the environment.

Cellini, the “Contemporary Italian Roastery,” explores coffee beyond the ordinary. Its approach guarantees superior results and consistent quality, achieved through rigorous raw material selection, slow roasting techniques, and tailored grinding. “Quality first” is Cellini’s mantra, positioning the brand as a benchmark in the world of exceptional coffee.
Biova Project was founded in 2019 and focuses on transforming food surplus into added value, initially by creating craft beer from unsold bread. This approach has significantly reduced the use of virgin raw materials and CO₂ emissions, establishing Biova as a pioneer of sustainability in the food sector. Now embracing a new challenge, Biova is giving new life to coffee, further expanding its commitment to eco-friendly production practices and innovation.
Arc’s signs the visual identity, creating a design that blends Biova Project’s graphic system with the unconventional, distinctive elements typical of Cellini’s communication. The result is a product that expresses food circularity in a compelling and engaging way.

Giorgio Boggero, CEO of Cellini, shares his enthusiasm for the project:
“I’m very happy with what we’ve created together with Biova Project. It perfectly reflects Cellini’s philosophy of many years: giving new life to something that would otherwise be lost and discarded.”
His words are echoed by Gianluca Fausti, CMO of Cellini:
“The coffee capsule production process inevitably generates production waste, as aluminum is both a technological and delicate material. Our mission has always been to think and explore beyond the ordinary, and this mindset allowed us to turn a challenge into a unique project. The collaboration with Biova Project gave rise to an exceptional beer that celebrates our commitment to giving coffee a second life, creatively supporting a virtuous circular economy.”
Franco Dipietro, Founder and CEO of Biova Project, highlights the importance of the collaboration:
“The project with Cellini was born from a shared desire to push beyond the traditional boundaries of a product’s beginning and end of life. It’s exciting to realize how the concept of ‘waste,’ when collaboration is involved, can be reduced or even eliminated—because what is waste for one can become a resource for another. This is how Biova Cellini was born: a coffee beer that tells a story of recovery and waste reduction, but also a product of high quality, bringing together the world of craft beer and carefully selected and roasted coffee.”
The beer produced by Cellini and Biova Project is available in all the best Cellini bars.
